CHAMPAGNE OOLONG
An incredible Taiwanese oolong produced from tea leaves that have been bug-bitten by green leafhoppers. The insect bite releases Terpenes (potent aromatic compounds that act as a defense mechanism for plants) adding a sweet note and a deep honey+fruit flavor to the tea. Tea producers manage their gardens in the most natural way possible in order to facilitate this process. A must try for oolong lovers- truly unique, smooth and sweet.

PREPARATION
1 tbsp - 8oz - 195˚ water
2 minutes for first infusion, add 1 minute to each additional
Adjust amount of leaves and steep time to taste. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the flavors and aromas.
TRADITIONAL PREPARATION
If using a Gaiwan or Yixing pot: Fill 1/3 with tea leaves. 195˚ water. Rinse leaves and steep for 30 seconds
